Samosa Quesadillas Recipe
Samosa Quesadillas
Ingredients:
- 3-4 small boiled potatoes peeled, chopped into small pieces
- 1/2 cup frozen peas thawed
- 1/2 small onion chopped
- 1/2 teaspoon black jeeri
- 1/2 teaspoon dhaniya powder (coriander powder)
- 1/4 teaspoon haldi (turmeric powder)
- 3/4 teaspoon amchur (dried mango powder)
- 1/4 teaspoon garam masala (optional)
- salt to taste
- 2 teaspoons oil
- 2 tablespoons chopped cilantro leaves
- About 6-8 ready whole wheat tortillas.
- 2-3 tablespoons oil to fry the quesadillas
Method
Heat the oil in a pan. Add the onion and saute till translucent. add the peas and toss around for a minute or two. Add the potato and dry spices and mix. If the mixture seems dry, add a few tablespoons of water. Mash the potato lightly. The mixture shouldn't be too dry or else it won't stick to the tortilla. Turn of the heat and add in the cilantro leaves.
Spread about 1/3 or 1/4 the mixture on a tortilla (depending on the size of the tortilla). Top with another tortilla.
Heat about 1-2 teaspoons of oil in a pan. Cook the quesadilla on one side for 2 minutes at medium heat. Turn over to the other side & fry till the quesadilla is crispy. Cut in to wedges and serve with cilantro chutney or just plain old ketchup.
Do the chai with it... the samosas and you will be in good company!
